Prepare your mise en place.
Combine the sugar and glucose with the water in a medium saucepan over medium heat. Bring to a simmer and cook, stirring occasionally with a wooden spoon, for about 5 minutes or until the sugar has dissolved completely. Remove from the heat and set aside to cool.
Pass the purée through a chinois and strain it into a medium mixing bowl.</
