For the dark chocolate mousse

  • 150 grams ( ounces) bittersweet chocolate, chopped
  • 400 milliliters


Prepare your mise en place.

To prepare the dark chocolate mousse, place the chocolate in a stainless steel bowl set over a bain-marie of simmering water over low heat. Heat, stirring constantly with a rubber spatula or wooden spoon, until the chocolate has melted. Turn off the heat but leave the bowl on the bain-marie.
