This is a rich and elegant rice pudding. If you want to go the extra distance, you can sprinkle the pudding with candied walnuts and serve some tiny brandy snap cookies on the side.

Combine the rice with the milk in a medium heavy-bottomed saucepan. Using a paring knife, scrape the seeds from the vanilla beans into the rice.
