This is a rich and elegant rice pudding. If you want to go the extra distance, you can sprinkle the pudding with candied walnuts and serve some tiny brandy snap cookies on the side.
Combine the rice with the milk in a medium heavy-bottomed saucepan. Using a paring knife, scrape the seeds from the vanilla beans into the rice. Then add the scraped beans, along with the cinnamon sticks, cinnamon, and nutmeg. Place over medium heat and, stirring frequently, bring to a simmer. Simmer, adjusting the heat, if necessary, for about 20 minutes, or until all the milk has been absorbe
