Prepare your mise en place.
Place the cream cheese and sugar in the bowl of a standing electric mixer fitted with the paddle attachment. Beat on low until just combined. Raise the speed to medium and beat for about 2 minutes, or until very smooth. Add the egg yolk and mix to blend. Turn off the motor, scrape down the sides of the bowl with a rubber spatula, and add the pastry cre
