  • 1 fresh pineapple, peeled, eyes removed, cored, and cut into medium dice
  • Approximately 70 grams ( ounces) sugar


Combine the pineapple with the sugar and vanilla bean in a nonstick sauté pan over low heat. Cook, stirring frequently, for about 10 minutes or until the pineapple is just tender.

Remove from the heat, allow to cool, and discard the vanilla bean before using.

The pineapple may be made up to 5 days in advance of use and stored (with the vanilla bean), tightly covered and refriger
