Deer Valley Resort, where I work, is one of Utah’s premier resorts, known far and wide for its cuisine and guest service. These chewy blond brownies are named for a miner who, long before chairlifts were built and modern skiers hit the slopes, traipsed around the valley carving his initials into the aspen trees.

Ingredients

  • 14 grams (1 tablespoon) melted butter
  • Flour for pan

Method

Preheat the oven to 162°C (325°F).

Using a pastry brush, lightly coat the interior of a 23-by-30.5-centimeter (9-by-12-inch) baking pan with the melted butter. Lightly dust the pan with flour.

Sift the flour, baking powder, and salt together. Set aside.
