Using a mixture of white and sweet potato creates a delicious sweet hash brown that’s packed full of nutrients. They are great on their own but taste even better topped with a poached egg.

Ingredients

  • 300 g sweet potatoes, scrubbed but skin left on
  • 300 g white potatoes, scrubbed but skin left on

Method

  1. Grate the potatoes into a large bowl.
  2. Add the flour, garlic powder and a little salt and pepper and mix well.
  3. Heat the oil in a large frying pan over a medium heat. Use an ice cream scoop or spoon to transfer portions of the mixture into the frying pan. You will probably fit 4–5 hash browns in the pan at one time. Press down on each with a spatula and
