A frittata makes a really great lunch for the whole family, either to eat at home or to pack into lunchboxes for school and work.

Ingredients

  • 200 g frozen mixed chopped vegetables or cooked vegetables
  • 6 eggs
  • 75 g

Method

  1. Preheat the oven to 200°C/180°C Fan/Gas Mark 6 and line a baking dish with baking parchment (I use a 25cm square baking dish).
