Homemade quiche usually requires a bit of time and patience but my quick and simple version uses tortilla wraps instead. Just as tasty but so much easier!

Ingredients

  • 2 large tortilla wraps
  • 4 large eggs
  • 75 g cooked vegetables, chopped, or

Method

  1. Preheat the oven to 200°C/180°C Fan/Gas Mark 6.
  2. Use a 10cm cookie cutter or a plate of a similar size to cut out 4 circles from each tortilla (8 in total). Press the tortilla rounds into 8 holes of a muffin tray.
