All the delicious taste of cauliflower cheese packed together with mashed potato to make a really tasty lunchtime treat.

Ingredients

  • 350 g white potato, peeled and cut into small chunks
  • 350 g cauliflower, cut into small chunks

Method

  1. Put the chunks of potato and cauliflower in a large saucepan, crumble in the stock cube and cover with boiling water. Bring to the boil, then reduce the heat and simmer for 8–10 minutes until the potato and cauliflower chunks are soft. Remove from the heat and drain well.
