If you love roast chicken but don’t always have the time to cook it, then this is the recipe for you. By simply removing the backbone from the chicken and flattening the chicken out (known as spatchcocking), you can cut the standard cooking time in half. Perfect for a mid-week dinner.

Ingredients

  • 1 medium chicken (about 1.75 kg)
  • 1 tbsp olive oil

Method

  1. Preheat the oven to 220°C/200°C Fan/Gas Mark 7 and line a large baking tray with foil.
