Mid-week I love nothing more than a one-pot meal, and this recipe is so easy: all the main ingredients are cooked together in one dish in the oven and the dip ingredients just need a quick mix, leaving you time to get on with something else.



  • 8 chicken thighs
  • 3 peppers (a combination of colours), halved, deseeded and roughly chopped
  • 1 red onion,


  1. Preheat the oven to 200°C/180°C Fan/Gas Mark 6. Put the chicken thighs, peppers, onion, garlic, cherry tomatoes and olives in a large baking dish and mix.
