If you have lots of veg left over after a big Sunday roast, don’t throw it away. Mix it with some tinned lentils to make these really tasty veggie burgers the following day.

Ingredients

  • 250 g cooked vegetables (such as carrots, cauliflower, broccoli, potato and squash)
  • 100 g

Method

  1. Mash the cooked vegetables as much as you can and place them in a large bowl with the lentils, red onion, garlic, breadcrumbs, grated cheese, egg, herbs and smoked paprika. Mix well until well combined. Season to taste with salt and pepper.
  2. Shape the mixture into 4 burgers.
  3. Spread the flour out on a large plate then coat each burger in the flour.
