Even the most chicken-adverse children (my daughter included) are sure to enjoy these tasty burgers packed with sweet veggies and fruit.

Ingredients

  • 400 g skinless chicken breasts
  • ½ mango, finely chopped
  • ½ red pepper, finely chopp

Method

  1. Put the chicken in a food processor and blitz it until it has broken down, almost to a mince consistency. Transfer the minced chicken to a large bowl. Add the mango, red pepper, garlic, spring onion, sweetcorn, egg and lime juice and mix well. Season with a little salt and pepper.
