A delicious sugar-free rice pudding recipe, naturally sweetened with coconut and topped with fresh fruit.

Ingredients

  • 200 g pudding rice
  • 400 ml coconut milk (from a carton)
  • 400

Method

  1. Put all the ingredients, except the berries, in a large heavy-based saucepan.
  2. Bring to the boil over a medium heat then reduce the heat, cover and simmer for 25–30 minutes, or until all the milk has been absorbed and the rice is soft, stirring it every few minutes.
  3. Remove from the heat and serve warm with chopped berries on top.
