This sunflower butter makes a great alternative to peanut butter in lots of my snack recipes.

Ingredients

  • 300 g sunflower seeds
  • 50 g coconut oil, melted
  • 3 tbsp

Method

  1. Put the sunflower seeds in a large saucepan or wok and dry-fry over a medium heat for 3–4 minutes. This helps to release the natural oils in the seeds.
  2. Allow the seeds to cool a little in the pan, then transfer them to a food processor with the melted coconut oil and blitz until smooth. This might take about 10 minutes so keep going!
