We Like to eat this soup with rice, but it is more usually served with noodles. For a special version of the soup, we sometimes replace the noodles with ravioli stuffed with a duxelles of shiitake mushrooms. If you have some of our Thai red curry paste, use that to make a stock in place of the herbs and spices – just add 2 tbsp of water with the vegetables.
