This fresh, slightly souffléed, omelette was a popular Sunday breakfast dish in our family, but it makes an excellent snack at any time of the day, especially if served with a mixed salad as here. The true joy of this ajja (the word really means just omelette) is the successful and refreshing combination of the mint, coriander and chilli.
