Fritters were a regular part of our Mum’s everyday cooking. Not only did everyone love these little crisp nuggets with a deliciously soft tasty filling – they were sort of our fish and chips – but they were an excellent way of using up leftovers. In the restaurant we have found them an invaluable way of bringing a wide range of added flavours and fresh textures to our vegetable dishes.
