This is yet another dish we put together for our fungi or mushroom fest. We wanted to ensure our menus remained balanced – with lots of mushroom flavour but without the feeling of too much mushroom.

Method

  1. For the pastry, sift the flour into a bowl, grate in the butter, then rub it in until it resembles fine breadcrumbs. Add the thyme, salt and pepper then, using a round-bladed knife, cut in enough cold water for it to bind into balls. Gather these into one ball and leave to rest for 20 minutes.
