We created this dish mostly because we really want to bring all three types of artichoke to people’s attention.

Ingredients

  • 150 g ( oz) Jerusalem artichokes
  • sprinkling each of thyme and rosemary leaves, chopped

Method

  1. Preheat the oven to 180°C/350°F/gas mark 4. Peel the Jerusalem artichokes and slice them thinly. Scatter in a foil-lined baking tray with the herbs and some seasoning, and roast
