As we Indo-Iraqis have settled as far east as Burma, we have Burmese relatives who cook this dish. The curry paste would be different – certainly without the galangal. We’ve suggested hard-boiled egg as a garnish, but you might like to try baking the eggs in a low oven for a few hours; this gives their insides a brown colour and gives them an interesting flavour.
