Schoog is a Yemenite chilli sauce. It was a feature of our childhood holidays in Israel, part of the bustling excitement of the falafel stands in the bus station, which would offer an array of chilli sauces and salads with which to smother your falafel. In summer my grandmother would make a “green” Iraqi version of this dish, called hil’ba, for the Sabbath meal on Friday nights. It was made as here, but without tomatoes, and using green chillies and peppers, and packed with mint. Eve
