As well as giving a wonderfully true basil flavour, the intense colour makes this a useful garnish.

Ingredients

  • large bunch of basil leaves
  • few drops of lemon juice
  • 1 fat garlic clove, fine

Method

  1. Blend all the ingredients apart from the salt. Start with little oil; once you have a smoothish paste add the rest. Add salt to taste and leave overnight in a cool place (not the fridge). Pass through a sieve.
