As a dressing, this is a useful “all rounder” – with a good colour and a striking smoky tomato flavour.

Ingredients

  • 125 g ( oz) sun-dried tomatoes
  • 1 large garlic clove
  • small

Method

  1. Blend all the ingredients apart from the salt. Start with little oil; once you have a smoothish paste add the rest. Add salt to taste and leave overnight in a cool place (not the fridge). Pass through a sieve.
