The term “reduction” here is a bit of a misnomer, as the reduction achieved is so intensely flavoured it is rather like really dark chocolate, needing the butter and cream to moderate it and make it palatable. This very versatile sauce is a Gate fave and now a bit of a “classic”. It obviously works well with wild mushrooms, but can be used in a wide range of dishes or added to other sauces for body.
