Just as the pestos are a wonderful way of preserving fresh herbs, this is an excellent way of keeping garlic in a form that allows it to be added to lots of dishes without any further cooking. So next time you find that you’ve accumulated six garlic bulbs from buying one every time you shop, roast them as follows.

Ingredients

  • several garlic bulbs
  • olive oil for drizzling

Method

  1. Preheat the oven to 180°C/350°F/gas mark 4 (it’s usually best to make this when you are cooking something else in the oven at this temperature). If there are too many outside layers of skin on the garlic bulbs, pull them off first. Drizzle the bulbs with olive oil
