Cooking times for quinces vary enormously through the year, so you really have to keep an eye on them, as they can take a long time or surprise you by how quickly they cook. In the restaurants, this dish is normally served with honey and ginger ice cream.

Ingredients

  • 2 medium quinces
  • crème fraîche, to serve

Method

  1. Put all the ingredients for the poaching liquid in a large saucepan and bring to a simmer, stirring from time to time.
  2. Meanwhile, peel, core and quarter the quinces, then add them to the simmering poaching liquid, cover and continue to simmer for 20-30 minutes, until tender (see the introduction).
