You can make this sort of coulis with any soft summer fruit. To give it an extra kick, you can add a splash of an appropriate fruit brandy if you like.

Ingredients

  • 150 g ( oz) soft summer fruit of choice, any stems, stalks etc removed
  • icing sugar, to taste

Method

  1. Put the fruit in a pan, barely cover with water and bring to the boil. Simmer, stirring, for a minute or two until the fruit breaks down slightly.
  2. Push through a sieve and sweeten, if necessary, with icing sugar. Serve hot or cold.
