Traditional French tarte au citron used to be a great Hammersmith favourite, but we wanted to develop it and so added the lemongrass.

Ingredients

  • 400 ml (14 fl oz) double cream
  • 2 lemongrass stalks, cut into short lengths and bruised

Method

  1. The night before, put the cream into a small pan and add the lemongrass and lime leaves. Bring to just below the boil, then take off the heat. Cover and leave overnight.
  2. To make the pastry, sift the flour into a large mixing bowl, mix in the sugar and rub the butter in with the fingers or process in a blender until it resembles breadcrumbs, then bring together wit
