If you can’t get a hold of fresh elderflowers to make this lovely pud, you can use a few tablespoons of elderflower cordial. If you do, cut down the amount of sugar you use, as the beauty of this dessert is the way the elderflower flavour cuts the sweetness of the meringue.

Ingredients

  • 4 egg whites
  • 240 g ( oz) caster sugar

  1. Preheat the oven to 150°C/300°F/gas mark 2, and Line a baking sheet with greaseproof paper. Beat the egg whites with the sugar and vinegar until standing in stiff peaks, then gently fold in the elderflowers.
