  • About

I used to make spitzbuben with my Oma Sieghilde every year. These buttery, flaky, jam-filled cookies dusted with powdered sugar have long been a family favorite, and you will be so happy that you put spitzbuben on your baking list this year! As for the jam filling, just use your favorite flavor. I love raspberry, apricot, or cherry.

Ingredients

  • 3 hard-cooked eggs, yolks only
  • 2 large egg yolks
  • ¾ cup plus 2

Method

  1. Using the back of a spoon, press the yolks of the hard-cooked eggs through a fine-mesh sieve (the finer, the better) set over a medium bowl. Add the egg yolks. Using a fork, stir until a smooth paste forms. Add the butter, salt, granulated sugar, and lemon zest; whisk until incorporated. Add the flour and milk and, using your hands, knead until a smooth dough forms. Wrap
