There’s no better way to utilise your leftover Bruce sponge than to turn it into the most magnificent cake truffle you’ve ever tasted.
Start by making the chocolate crumble. Heat the water and sugar in a saucepan over a medium heat. Using a candy thermometer or temperature probe, take the sugar syrup to 130°C (270°F). Do not stir or do anything at all with the pan. Be careful because these are extremely high temperatures and if you think burning yourself on an oven is bad, wait until you do it with boiling sugar – it’s not fun
