Method

Crush the bones from an ox foot and shin and boil them over a low fire for 3 hours. If the foot is large, add enough water to completely fill four soup plates. Then remove the bones and boil them in half the amount of fresh water, so that there will be altogether 2 glasses to mix with the first bouillon. Boil it thoroughly for 15 minutes and strain. This bouillon may be kept in a cold place for 3 days in bottles, corked with paper.

Remove the meat from the bones and mix with a roll and parsley to make small meatballs. When serving the bouillon, pour a teaspoon of rum into each soup bowl. This bouillon is very healthy for weak children and adults as indicated above.
