Cut a half pound of good, tender, lean beef into small pieces and place in a small stoneware pot. Cover with glasses of water and bring to a boil twice. Add salt, strain, and serve. Add the beef which remains to the general stockpot and recook it with the beef intended for that day’s soup at dinner.
