  • 2½ to 3 lbs beef

Method

Prepare a bouillon as usual from 2½ to 3 lbs of beef and add, if desired, 1 beef kidney. Add root vegetables, spices, and 2–3 dried mushrooms. Boil and strain. Peel, slice, and cook 6 small salted cucumbers [in the bouillon]. If necessary, add some cucumber brine to make it pleasantly sour. Slice
