Method

Prepare a dough that is not too stiff from 2 glasses of the very best flour, 1 egg, some salt, and not more than 1 glass of salted water. Chop up the dough quite finely with a knife, or better yet, pinch it off with your hands. Bring 9 glasses of milk to a boil, add the cut-up dough, and bring to a boil 2–3 times. Add salt and 1–2 spoons butter.
