Peel and seed half of a good, medium-size pumpkin. Cut the flesh into even pieces, place in a stewpan, and barely cover the pumpkin with water. Place the pan on the fire, covered, bring to a boil, and immediately drain in a fine sieve. Then pour on 2–3 glasses of fresh, boiled water or milk, add ½ French roll without crusts, and boil until soft. Rub through a colander, dilute with 3 bottles of boiled milk, and bring to a boil. Add salt and 1–2 spoons butter, or add sugar and ½ cup finely pounded sweet almonds.
