Peel and slice fresh or salted cucumbers, marinated mushrooms, marinated salted milk-agaric mushrooms,* woolly milk-caps, saffron milk-caps, and apples, both fresh and marinated. Plums, cherries, peaches, and marinated grapes may also be added. Boil and peel potatoes, beets, and green beans, using in all a full plateful. Place all this in a soup tureen. Just before dinner, mix a small spoon of prepared Sareptskaja mustard** and some salt in a stoneware dish and add 1 spoon of olive oil, drop by drop, until the mustard turns into a thick sauce. Dilute with 3 bottles of sour shchi or kvass and add salt, pepper, green onion, parsley, and dill. Stir everything together and add a piece of ice.
