Method

Moisten ½ lb of sugar pieces with water, place the pieces in a clean skillet, and heat the pan on top of the stove until the sugar melts and darkens. Add a little boiling water, bring to a boil, and pour into a pot. Use for dark sour-sweet sauces, adding about ½ spoon at a time. Reheat the sugar slightly before using.
