  • 3 lbs beets
  • [sic] spoon flour
  • ½ spoons butter
  • (½ onion, if desired)
  • vinegar
  • salt
  • ¾ glass sour cream or bouillon


    Boil, or preferably bake, about 3 lbs beets. Peel and very finely chop. Fry 1 spoon finely chopped onion in spoons butter and add ¼ spoon flour and the beets. Mix everything together, add ¾ glass sour cream, salt, and 2–3 spoons vinegar and bring to a boil. Some people add sugar or honey.

    To serve the beets with hare and black grouse, omit the flour and sour cream, but add several spoons of rich bouillon instead.

    Garnish with sippets of white or sieved wheat bread (sitnyj), small sausages, patties, fried mutton breast, or smoked ham fried in butter. Cf. garnishes.
