Method

Drop the marrow from beef bones into boiling water for a very short time. Remove with a slotted spoon, cut up, and place in a saucepan. Barely cover with bouillon, add salt and ½ spoon butter, and bring to a boil over a high flame.

When the amourettes have browned, remove and use them to garnish spinach, sorrel, peas, etc.
