  • 1 large calf’s head, or 1 small head plus calf’s feet
  • 1 carrot

Method

Clean a calf’s head as thoroughly as possible. Remove the bones, wash the meat, and boil with root vegetables, spices, and vinegar. Cut the meat into pieces. Fry 1 spoon flour in 1 spoon butter, dilute w
