  • 2 bottles cream or whole milk
  • 1 cup semolina
  • cups sugar
  • ½ lb walnuts


Bring 2 bottles cream or whole milk to a boil and sprinkle on 1 cup semolina and ½ lb walnuts ground with ½ cup sugar. Boil the kasha, stirring to prevent lumps and to keep it from burning. When cooked, transfer to a sauté pan and bake in the oven until a crust forms on top. Sprinkle 1 cup sieved sugar over the top crust. Then heat a tile or a piece of metal (plitka) until it is very hot and hold it over the kasha until the sugar caramelizes like candy (ledenets) *

*The heated tile or piece of metal served as a salamander. Today we would broil the pudding briefly.
