  • 3 glasses cream
  • 4 egg yolks
  • ⅝ lb, or 1 full glass, sugar
  • ⅛ lb, or ½ glass, roasted coffee
  • 3 lbs, or 6 glasses, salt


Beat egg yolks and sugar until white, dilute with cream, and stir on top of the stove until the mixture thickens. Sprinkle on ⅛ lb of the very best, freshly roasted coffee. Remove the cream from the fire, cover, and let it cool. Strain into a mold, etc.
