Ingredients

  • glasses sour cream
  • ¼ lb, or ¾ glass, sugar
  • 3–5 zolotniki isinglass
  • lemon oil, or vanilla, or rum may be added, as indicated in #1450

Method

Beat glasses thick, fresh sour cream with a whisk over ice until it forms soft peaks. Sprinkle on ¼ lb sugar, mix with ½ glass warm isinglass, and set in a cold place.

Sometimes the sour cream is combined with an equal amount of thick fresh cream. Mix the creams with isinglass, sugar, and berries from jam without juice.
