Method

Beat with a whisk over the fire 4 egg yolks, lb fine sugar, the zest from ¼ lemon, the juice from lemons and 2 oranges, ½ wineglass Madeira, and 1 spoon white rum until the mixture thickens. Then set [the pan] on the edge of the stove and beat constantly while someone else uses a spoon to fill the cookies with the custard, as indicated above.
