Place in a saucepan 5 lbs finely sieved fresh farmer’s cheese, 10 raw eggs, 1 lb very fresh unsalted butter, and 2 lbs very fresh sour cream. Set on top of the stove, stirring constantly with a wooden spatula so that the mixture does not burn. As soon as the cheese begins to boil—that is, as soon as even one bubble appears— immediately remove from the fire, set on ice, and stir until it is completely cool. Add 1–2 lbs sugar ground with 1 vanilla bean, about ½ glass blanched ground almonds, and ½ glass currants. Mix everything thoroughly, pile into a large mold lined with a napkin, and add weights.
