Dissolve 1 lb sugar in slightly less than a full glass of water, mix with 1½ glasses honey, and boil in a large saucepan. Sprinkle on 3 zolotniki potash, a little cinnamon, cardamom, cloves, allspice, and ½ lb finely chopped unblanched almonds. After removing from the fire, sprinkle on 1½ lbs flour and mix until smooth. Turn the mixture out onto a table dusted with flour and knead the dough with your hands. If it is not thick enough, add more flour. Roll it out, cut into various shapes, place them on a baking sheet lightly greased with unsalted butter, and bake them in the summer oven. Remove from the oven when brown.
Bring 1½ lbs sugar and a little water to a boil twice. When the syrup becomes viscous, stir in ½ lb grated chocolate. Spread this mixture first on one side of the spice cakes and, after they have dried out in the oven, on the other side. Return them to the oven for further drying.
