Method

Bring 3 lbs honey to a boil, skim, cool to the temperature of milk fresh from the cow, and begin to beat with a wooden spatula. After beating for half an hour, add 20 eggs one by one, incorporating each egg thoroughly before adding another one. Beat continuously while the oven is heating* and then add enough flour to make a thick dough. Divide the dough into 20 parts and distribute among paper casings prepared earlier. After adding the flour, do not overbeat; just mix and pile into the casings.

*This instruction may sound deceptively simple, but it should be remembered that wood-burning ovens took a long time to heat up.
